Tomato, Basil & Mozzarella Tart

There’s something simple and comforting about a savoury tart fresh from the oven. This Tomato, Basil & Mozzarella Tart is one we love at The Cosy Oven for light lunches and brunch boards. It’s flaky, fresh and full of flavour — and surprisingly easy to make at home.
Ingredients
- 1 sheet ready-rolled puff pastry
- 150g cherry tomatoes (halved)
- 125g fresh mozzarella (sliced or torn)
- 2 tbsp pesto
- 1 tbsp olive oil
- Small handful fresh basil leaves
- Salt and black pepper
- 1 egg (for egg wash)
Method
- Preheat your oven to 200°C (180°C fan).
- Unroll the puff pastry onto a lined baking tray. Score a 1-inch border around the edge (don’t cut all the way through).
- Spread pesto inside the border.
- Arrange tomatoes and mozzarella evenly over the pastry.
- Brush the edges with beaten egg and drizzle filling lightly with olive oil.
- Season with salt and pepper.
- Bake for 20–25 minutes until golden and puffed.
- Finish with fresh basil before serving.
Cosy Oven Tip
For extra flavour, roast the tomatoes for 10 minutes before adding them to the tart — it brings out their natural sweetness.
